Pearl Harbor Remembrance Day honors the victims of Japan’s attack on Pearl Harbor, an American Naval Station in Oahu, Hawaii. On December 21st, theWinter Solstice marks the shortest day and the longest night of the year as the Northern Hemisphere is angled the farthest away from the sun.

December 24th marks the beginning of Hanukkah, a Jewish holiday when the Menorah is lit with 8 ascending candles to match each day that one pure bottle  of olive oil lasted in the Holy Temple. Then, we celebrate the birth of Jesus on Christmas Day with family, friends and loved ones.

Finally, Kwanzaa is an African-American cultural festival that lasts from the 26th of December to the 1st of January and it celebrates family, community and heritage.

SPA CUISINE

Holiday Detox Soup

Prep Time: 15 Minutes | Cook Time: 25-30 minutes| Serves: 6 | Calories: 228

Ingredients:

  • 1/4 cup water (or vegetable broth)
  • 1/2 of a red onion, diced
  • 2 cloves garlic, minced
  • 3 celery stalks, diced
  • 3 medium carrots, diced
  • 1 small head of broccoli, florets
  • 1 cup chopped tomatoes
  • 1 tablespoon fresh ginger, peeled and minced
  • 1 teaspoon turmeric (powdered)
  • 1/4 teaspoon cinnamon
  • 1/8 teaspoon cayenne pepper (optional)
  • a dash of fine-grain sea salt and black pepper
  • 6 cups water (or 4 cups vegetable broth + 2 cups water)
  • 2 cups kale, de-stemmed and torn in pieces
  • 1 cup purple cabbage, chopped
  • juice from 1/2 of a small lemon

Directions:

1) In large pot, add water and turn heat on medium-high. After it’s hot, add onion and garlic. Sauté for 2 minutes, stirring occasionally.
2) Add celery, carrots, broccoli, tomatoes and fresh ginger. Stir and cook for 3 minutes, adding extra water or broth as needed (another 1/4 cup).
3) Stir in powdered turmeric, cinnamon and cayenne pepper. Add a dash of salt and pepper.
4) Add in water (or vegetable broth) and bring to a boil. Reduce heat and simmer for 10-15 minutes or until vegetables are soft.
5) Add in kale, cabbage and lemon juice near the last 2-3 minutes of simmering.
